Arabic is the official language of the UAE, but the Arabic you hear at a counter is rarely one dialect. Gulf Arabic, Emirati vernacular, Levantine, Egyptian and Modern Standard Arabic sit side by side in Amer centres, hospitals and courts. A good interpreter knows when to stay close to formal Arabic and when a Levantine or Khaleeji phrasing will actually be understood.
